Air-fried spicy Chinese eggplant is served as a vegetarian dish. The eggplant is sliced and deep-fried in oil and garlic; then they are coated with a purée of ginger and chili peppers. Serve this dish with steamed rice for a vegan meal or indulge in it like it’s nothing by adding some eggs on top; eggs make this dish even tastier.

 

I am not a vegan, but I still have vegan recipes for others looking for them. I have just made this recipe, and it was delicious.

 

You'll need:

1 cup dried lentils

One large sweet potato, peeled and diced

Two small onions, diced

Two cloves garlic, minced or grated

2 tbsp ground cumin  

2 tsp dried oregano 1 tsp ground cinnamon 3/4 tsp salt 3/3 cups vegetable broth 6-8 corn tortillas (any size) 2 cups salsa (store-bought or homemade) 1 can black beans (drained and rinsed if canned), optional fresh lime juice (to taste) - Lime wedges for garnish

 

Keto Broccoli Cheese Soup Recipe

 

Ingredients: 2 tbsp butter 1 small onion, chopped 3 cloves garlic, minced or grated 4 cups fresh broccoli florets 1/4 cup almond flour 3 cups vegetable broth salt and pepper to taste 2 teaspoons Dijon mustard 1/2 teaspoon onion powder 8 ounces cream cheese 2 cups shredded sharp cheddar cheese

Instructions: Melt butter in a medium saucepan over medium-low heat. Cook onions until tender. Add garlic and cook until soft. Stir in broccoli and cook for another minute. Whisk in flour to coat veggies, then whisk in broth one ladleful at a time as you stir it up from the bottom of the pan - you want enough liquid that it gets thick if you don't keep stirring. Stir in mustard, onion powder and salt and pepper. Bring to a boil then reduce heat to low and simmer for 15 minutes. Stir in cream cheese until it's melted, then continue cooking for another 10-15 minutes or until broccoli is soft.

 

I love my crock pot. It is so easy to use and I can throw in my ingredients in the morning before I head off to work. All I have to do when I get home is turn the crock pot on high and let it do its thing.
